In 2019, I had a breakfast dish that changed my life. I was in Modena at Casa Maria Luigi, and was handed a slow oven-roast cotechino on an almost cooked and covered with a dollop of zabaglione. I called it The Best Breakfast in Italy, and was eager to meet the chef behind it – Jessica Rosval. In the years following, I keep going back and Jessica keeps making amazing me.
As the head chef of Casa Maria Luigia, Jessica she creates and prepares a menu that showcases Italian and Modenese cuisine for brunch and now the luxe villa’s new restaurant Al Gatto Verde. And her wall is filling with awards such as Italy’s Best Chef‘ by Guida dell’Espresso (2021) and The Best Chef Rising Star Award (2022). In this podcast, Jessica tells her story on coning to Modena and collaborating with Massimo Bottura, and shares her non-profit Association for the Integration of Women.
