Did you know that there more 600 different kinds of cheese in Italy? Double that number just to include a minimal idea of the homemade and one-of-kinders that we will most likely never encounter. italy is all about a cheese, but blue is the last thing that comes to mind when we mentally roll call our favourites. That’s about to change. Eleonora Baldwin , tv host and founder of Casa Mia Tours, has made it her mission to discover and taste as many Italian cheese as possible, and she’s all about the blues.

“I have not had a cold in a long time, and it’s become I consume huge amounts of blue cheese.”

To be honest, I was a little hesitant and definitely surprised when Eleonora sent me a list of four blue cheeses (I am still debating the plural use of cheeses vs cheese collectively). I envisioned my cheesy guest wanting to talk creamy. Instead she literally blew my mind with her blue selections, and the stories behind them. Eleonora would know. As host of Gambero Rosso’s AB Cheese , she fully immerses herself into the stories and making of the particular and the mundane Italian cheese varieties.
